Upwas Kachori Recipe
Upwas Kachori – Learn how to prepare this traditional Maharashtrian dish
Upwas Kachori is prepared using Potato , Coconut , coriander as main ingredients. It is a vegan recipe.
Typically prepared during fasting festivals like Navratri, Ekadashi, Mahashivratri, etc. it is widely popular in Maharashtra.
I normally prepare it for regular evening snacks , preferring to eat with a piping hot cup of ginger tea.
Since the covering is made from potato it tends to go soft after few hours. To ensure the kachoris retain their crunchiness there are two main things one has to ensure before proceeding.
1. The potatoes should be completely cooled down after boiling . This helps to remove all the excess moisture from them
2. Use a coarsely ground flour mix of Varai Tandul ,Sabudana Pith to roll the kachoris in just before frying.
Apart from these balancing the sweet and spicy flavors are the most important factors.
The kachoris are quite a delicacy , crispy and crunchy. I am sure after preparing them and savoring them, you will fall in love with them and crave for them time and again.
I recently introduced a twist to the dish by preparing a upwas kachori chaat. On the kachoris, add sweet curds , put some spicy mint and tangy tamarind chutney and top it with the sweet potato chivda. The result is an out of the world experience.

- 2 Cups Freshly Grated Coconut
- 1 Cup Finely chopped Coriander
- 0.5 Cup Finely chopped green chillies
- 2 TBSp Sugar
- Salt to Taste
- 1 inch Finely Chopped Ginger
- 1 TBSp Lemon juice
- 0.5 Cup Chopped Cashew Nuts
- 1 Tsp Cumin Seeds (Jeera)
- 1 TBSp Ghee
- 20 Raisins
- 4 Medium Sized Potatoes
- 1 Cup Varai Tandul
- 1 Cup Sabudana / Sago
- Salt to Taste
- Cold pressed Groundnut oil For Frying

- In a thick bottomed pan, add some ghee, add the jeera, add the chopped chillies, ginger and saute for 2 minutes. Shut off the gas
- Add coconut, sugar, salt, cashew nuts, coriander , lemon juice and mix well. Do not cook this mixture now. The filling is ready
- Boil the potatoes and cool them completely. You can freeze them too for few hours.
- Dry roast the Varai Tandul and Sabudana . Cool it completely and grind half mixture into a coarse flour and half into fine flour
- Mash the potatoes and mix the fine flour mix in them along with salt to form a soft ball.
- Now prepare a small puri from the potato ball. Stuff it with a big tablespoon of the mixture, add a raisin in it and close the puri to form a small ball. Similarly prepare all the kachoris
- Heat the oil in a heavy bottomed vessel on a medium flame. Roll the kachoris into the coarsely ground flour mix and drop them in oil gently for frying. Fry till they become golden brown in color.
- Upwas Kachoris are ready to be served
