Rajgira Dosa – Learn how to prepare Rajgira Dosa for both regular and upwas related breakfast or snacks.

Rajgira or Amarnath seeds are rich in protein content and easily available in Indian markets. Traditionally we prepare ladoo, chikki, kheer and dosa using this.

My favorite is the chikki which is a good accompaniment during high energy required treks. I incorporate the seeds in the Energy Bars I prepare prior to the treks.

Rajgira dosa is a quick and easy breakfast at home, accompanied by Coconut Coriander Chutney. I add a bit of buttermilk or curd to give it a good flavor. It also helps in the fermentation of the batter. Normally what I do is, I mix the Rajgira flour , rava/suji in buttermilk and water as soon as I get up. By an hour or two later, when we are ready for breakfast, the mixture has slightly fermented rendering a nice taste and texture.

In case you want to convert this recipe into one that can be consumed during upwas or fast, simply remove the chopped onion and replace the rava with finely ground samo millet or varai (in marathi). The Upwas friendly Rajgira Varai Dosa batter is ready. Make thin crispy dosas or thick ones and top them with Upwas Batata Bhaji.

My favorite accompaniment for Upwas Rajgira Dosa is Peanut Curd Chutney.

Instructions
  1. In a clean big bowl, mix the Rajgira flour, rava/varai, salt, sugar, buttermilk and water for a mixture with pouring consistency. If using curd, beat the curd well before adding to the dry ingredients.
  2. Let it soak for minimum 2 hour.
  3. Just before preparing the dosas, add chopped onion and coriander

  4. On a hot iron girdle, pour 1 TBSP of oil and spread it evenly on it. Heat the girdle on a medium flame till you can sense the warmth if you place your hand 2 inches above the girdle.
  5. Now take a ladle full of batter and pour it on the girdle in a manner that it forms a nice net pattern. Close the formed dosa with a lid and cook it till the water from the lid starts hitting the pan with a sound. Now open the lid, flip the dosa and let it cook for 2 min without the lid.
  6. Take it off the girdle and place onto a plate. Rajgira Dosa is ready to be served
