Rajgira Roti – Learn how to prepare this gluten free roti
Rajgira Roti is a gluten free dish prepared using Amaranth/ Rajgira flour. Typically prepared during festivals like Navratri, Ekadashi, Mahashivratri, etc. it is these days not just restricted to fasts.
Rajgira is high in protein and fibre content. It is a good replacement to wheat atleast 2-3 times a week. It is a diabetic friendly recipe too. You can add different spice powders like coriander, cumin, chilly to make it a meal in itself. A rajgira roti with curds is a good breakfast option as well.
Sometimes, I cannot help but think that our ancestors quite scientifically planned our diets during festivals, leading to food consumed not just per the locale or season but also from staying fit point of view.
Since this flour is gluten free, working with the dough is a bit difficult. It will give some cracks at the ends, but its ok. Use good amount of dry flour when you roll the rotis. Also while rolling keep the size of Rotis medium (6 inches), roll a bit thick and keep closing the cracks while rolling.
If you have a bag of milk , then use it while rolling out the rotis. This method doesn’t call for extra flour.
You can serve it with paneer curry, raw banana curry, danyachi amti .
Sometimes I like to just savor it with a dollop of ghee or a bowl of curds.
I also use Rajgira seeds while preparing the energy bars.

- 1 Cup Rajgira flour / Amarnath Flour
- 1 Tsp Cumin Powder (Jeera)
- 1 Tsp Dry Red Chilly Powder
- 1 Tsp Salt Per Taste
- 1 TBSp Ghee
- Plain filtered

- In a dry , clean plate take the Rajgira flour. Add all the powders, salt and knead a soft ball using water as required.
- Make four small balls from the dough. Roll the balls into small roti using a rolling pin and rajgira flour for dusting
- On a medium flame gas, heat the iron tawa till it feels warm to the hands. Put the roti and roast for a minute. apply some ghee and flip. Apply ghee to the roasted end. Cook for 2 minutes both sides.
- Rajgira Roti is ready to be served
