Upwas Idli Recipe

Vari Tandul /Kodri/ Moriyo/ Samo Rice/ Indian Banyard Millet grows among rice paddy and is a grass wild seed. Just like rice it requires damp climate to grow and has a unique flavor of its own. Unlike Rice , a grain, this is a millet and like Rajgira Seeds (another grass seed) these are typically eaten during fasts when grains are not supposed to be consumed.
Samo Rice is gluten free, low in sodium, rich in digestible fiber and hence keeps one feeling full. Combining it with protein based curries is a wholesome meal during fasts. It has a rich source of minerals and vitamins, providing essential ingredients.

But my favorite snacks prepared using Varai are Upwas Idli and Upwas Dhokla accompanied with Coconut Coriander Chutney and Peanut Curd Chutney.
Since, it is Navratri festival season, I would be preparing these two as breakfast over the weekend. You can also prepare it during non festival season since it is a healthy breakfast recipe.
Sometimes I also serve them to my family with the Danyachi Amti with some vegetables added to it.

- Dry Roast Samo Rice and Sabudana separately , cool down and grind it
- In a bowl, add the ground samo rice, sabudana, curd, salt and mix well
- Add water till you achieve an Idli consistency. Leave to soak for 30 minutes
- Grease the Idli plate moulds and keep water for steaming
- After 30 minutes check the consistency of batter. If it has thickened then add water TSP wise to adjust the consistency.
- Add 1/2 tsp baking soda /Eno fruit Salt just before pouring the batter in Idli plates. Mix well and now pour the batter on the Idli plate moulds
- Steam for 15 minutes. Switch off the gas and then let the Idlis cool in the Stand for 5 minutes. Remove on a clean plate once cooled completely. Upwas Idlis are ready to be served
