Normally for wedding anniversaries we end up giving a flower bouquet. This time last year, I made a different type of edible bouquet for my friend’s wedding anniversary – Baked Potato Roses Bouquet.

The recipe was quick , simple and completely homemade. Probably the cheapest and most creative bouquet I ever made. It was healthy too since, it was baked, used minimal oil and did’t take a lot of preparation time. While the roses baked, I quickly completed the rest of the chores and got ready for the party.

Instructions
  1. 1) Slice the potatoes into thin long slices such that the slice should be transparent enough to see your fingers through it. If you are not good with knives , use the food processor slicer or the hand slicer. 2) Brush the cupcakes tray with oil and dust with some flour or put cupcake paper cups. Preheat the oven to 200 deg Celsius Arrange the potato slices starting from big slices to small slices , overlapping each other. For the innermost use small slices curled up in cylinders 3) Add the seasonings and bake for 20-30 min till the edges start browning. We want to have crisp edges and soft inner petals.
  2. Let the Baked Potato roses cool a bit. Then gently remove them starting to loosen from the edges to the bottom with a plastic scrapper. If they are stuck at bottom do not panic, just give some gentle nudges and they will come out easily.
Recipe Notes

Use silicon cupcake holders for best results.

You can use sweet potato, brinjals, carrots, zucchini to make multicolored roses similar to one like this.

You can serve it with Cheese dips, Hummus, Tahini as a perfect starter for a Vegan / Vegetarian guests at your party.
